You either love it or you hate it. We all love Marmite in the family, thankfully. So, it is only natural that we mix spaghetti with Marmite. Trust me, it has that umami taste and it is heavenly!
Ingredients (serves 4)
- 500g spaghetti
- 3 tbsp marmite
- 100g smoked pancetta (cubes)
- 1 clove of garlic (finely chopped)
- A bunch of basil leaves
- Olive oil
- 150g Chestnut mushrooms (finely chopped into cubes)
- Pinch of ground black pepper
- Pinch of salt
Methods
Firstly, boil a pan of water and add some salt to it (increases the boiling point), add spaghetti. It usually cooks within 10 minutes for al dente (so there’s a bite to it). In this case, you will want to cook it just before its al dente, about 8 minutes (molto al dente) as you will be cooking it again for few minutes later with all the ingredients to make it all yummy and al dente.
Next, heat up some olive oil and add in the garlic and pancetta. Once it is golden brown, add the mushrooms and marmite.
Now, add the spaghetti and about 150-200ml of the pasta water into the pan. Add chopped up basil. Gently simmer for 2-3 minutes.
Serve with some fresh basil to garnish and ground black pepper to taste. Buon appetito!
